it happens to all of us at some point. agreeing to host your book club, [cough cough, wine night-slash-insert-any-excuse-for-a-gab-fest]. And then simultaneously remembering that by also agreeing to host, means supplying some type of food substance. Next time you find yourself here, remember this: be fancy but not fancy.
This fresh and easy salsa can be prepared a day in advance and then thrown together at everyone's favorite time interval: the last minute. plus, tips below to really wow them and fry up your own tortilla chips. go ahead, get a little fancy.
INGREDIENTS
- 1 can shoepeg corn, drained
- 1 can black beans, drained & rinsed
- 1 pint cherry tomatoes, quartered
- 1 green pepper, diced [optional if you don't like green peps, or jazz it up with diced jalapeno for the spicy crowd]
- 1/3 cup oil
- 1/3 cup sugar
- 1/3 cup apple cider vinegar
- Feta cheese, crumbled
Directions
Whisk together oil, sugar and vinegar and toss with corn, black beans, tomatoes and green pepper to coat. Cover and refrigerate so all the juices mix together in perfect harmony (this isn't a must, but it's best when you let it sit for at least 30 min--so you can make it ahead!)
Mix in feta cheese and serve with your favorite tortilla chips. (or easily make your own here!)
